Peach Pie


So, I made my first peach pie. Really, the first pie I have ever made on my own. It turned out pretty darn well, I have to admit & I actually really enjoyed making it. Here's the process & the recipe I used. Try it out- the fresh peaches added that extra little bit.

PEACH PIE (from the Better Homes Cook Book)
2/3 cup sugar
2 TBS quick-cooking tapioca
1/4 tsp cinnaon & nutmeg
6 cups thinly sliced peaches
1 recipe for double-crust pie (I just used the one in the book but you can buy crust too to make it easier)

Mix sugar, tapioca, cinnamon, & nutmeg. Add peaches (really pretty peaches like mine help!) & coat. Let stand for 20 min (stir it once in a a while). Meanwhile get the crust all ready.

Transfer peach mixture into the pastry-lined plate. Trim bottom pastry to edge of pie plate. I guess peach pies need a cover over the top. You can eitehr place one on & cut slits or do a weave one. I did the weave.

Place pie plate on baking sheet. Cover edges with foil so they don't cook too fast. Bake at 375 degrees for 25 min. Take off the foil & cook another 25 min.


Super easy & super good. Especially with some ice cream on the side! (with my extra dough & filling I made mini pies in my mini muffin tins! They turned out pretty darn cute!- They are made the same way as the pie only mini!)
