The best 'ding-dang' roast ever!

Yummm... I love roast. But decidedly don't like roast with potatoes. So, I made this beef roast last night to put with mashed potatoes. MUCH BETTER!

The secret is this...
You sear the outside in a frying pan. I put garlic, salt, pepper on it when I do this. I think the theory is that when you sear it, the yummy juices stay inside more.

Then I put it in a crockpot with carrots, lotsa onions, & the McCormicks pot roast seasonings...
Then for the mashed potatoes I leave the skins on & boil. Then add cream cheese, more garlic (proof of the earlier garlic post), & butter. Then I wipe them with by electric beater.

Ta-da! Brilliant yummy winter food. Scott calls it He-Man food... & it is.

haha, i made a roast today! Perhaps i will make your mashed potatoes to go with it!

Yummy! It is supposed to snow this weekend (after a few days of nice, 60 degree weather) so I think a nice roast will be perfect! I have also decided that I prefer the potatoes to be cooked separately, so I'll try your mashed potatoes :)

MMM, looks delicious! I made a crock pot roast for dinner on Sunday and still have a little left to enjoy. I make my mashed potatoes the same way, except adding a little milk. But leaving the skins on and sticking in that cream cheese is key to creamy goodness.
