Yum- we made Zuppa Toscana the other night! It's a relatively easy recipe & it tastes almost as good as the restaurant- SO GOOD!
1 lb spicy Italian sausage
1/2 lb bacon
1 qt water (4 cups)
2 (14.5 oz) can chicken broth
2 large russett potatoes
2 garlic cloves- crushed
1 med onion
2 cups chopped kale
1 cup whipping cream
salt & pepper
1. brown sausage into chunks
2. brown bacon set aside
3. put water, broth, potatoes, garlic, & onion- simmer til potatoes are soft.
4. add sausage and crumble bacon
5. simmer 10 min
6. add kale & cream to pot
7. heat through

Ooooh, I am going to have to try this SOON. Did you have a hard time finding kale?
Nope- kale was right at my grocery store. No problems at all.
Ahh! I am so excited you posted this. I have been craving it this pregnancy and Olive Garden is just a little far away - the one right by my house is opening in about 2 weeks but still, I would love to make this instead of running over there everytime the baby wants it. Thanks lady!
