Leftover Turkey Curry


I LOVE leftover Thanksgiving Turkey with a passion! I'll eat the whole Thanksgiving meal for days. But after a while the rest of the family wants to shake it up a bit. That's where my mother-in-law taught me Turkey Curry.

Leftover turkey
Can of cream of mushroom Soup
Can of coconut milk
curry to taste (I have this weird box kind but powdered is just as good)
onion (optional- I like it in everything so I got it)
salt & pepper to taste

Isn't it funny how us "Marmons" use "cream of mush" in everything?! I promise. Check out any stake or ward cookbook and it's in like half the recipes! haha. What can we say, right? It's good stuff.

Hmm... that looks good... I just am not convinced I like curry.... tempting... we do lots of turkey sandwiches!

Joan- It's true! My parents almost never cooked anything with Cream of Mushroom in it but I love it & use to all the time.

Es- It's true curry's not for everyone & the house still kind of smalls like an Indian restaurant but it's YUM!

We had this for dinner and it was YUM! It was so fast and easy too, unlike making a traditional curry. I am a convert to the cream of mushroom soup. :)

LOL, my husband hates Cream of Mushroom soup and that eliminated like half of the meals I grew up with!

I definitely have to try this recipe. I did a similar rice with sauce over rice with our leftover turkey and it was major blah.

I don't always use cream of mushroom soup...but with hectic lives..it sure helps. We love curry any way. Glad you like it. (:

3 Kids- (I keep wanting to call you by your name, but I figure your appreciate the anonymity!) I was SOOOO excited when I saw that on your dinner blog. You way sounds MUCH BETTER & isn't great when the kids will just eat what you made!

Christie- That's totally opposite of me. My parents NEVER cooked with it & I'm only just learning its magical propperties.

Katie- Yes, you want to make sure to add A LOT of curry & pepper. I'm a major spice person. I might even add garlic when cooking the turkey & onions.

April- Well, I used both & loved it. It doesn't taste like cream of mushroom. SO GOOD!
