Healthy Recipe: Gazpacho

Let me start off by saying, I would normally NEVER make Gazpacho. It's just not a part of my weekly menu planning. But my book group had a party & the food theme was all RAW foods & I was asked to make this Gazpacho recipe.

I made it semi-unsure of it's tastiness. So, I understand if you are looking at this thinking, "Umm... no..." but I say give it a try. I'd never know how much I love it & now it's a go-to for a quick healthy lunch.

Ingredients (this pic is for a double recipe) & a good blender :

1 hot house cucumber- not peeled (I used a regular cucumber b/c I couldn't find this fancy kind)
1 1/2 red bell peppers- seeded & cut
4+ Roma tomatoes
1/4 red onion (I used a little more than that)
3 cloves garlic
3 cups tomato juice
1/4 cup white vinegar
1/4 cup olive oil
1/2 TB kosher salt
3/4 tsp black pepper (I added more b/c I love pepper)

I added an avocado to make it more creamy & I think this was the "piece de resistance" (basically made this soup the BOMB!)

Instructions: 

Now this is where it gets complicated... put it all in your blender & blend ( I have a Cuisinart blender) . That's it. Done.

Basically, YUM!

Oh that looks yummy/frightening. I have always wondered about gazpacho, but have been a little afraid to try it. May just try it soon. Will be adding avocado for the BOMB bt hehe

Gazpacho has never sounded appealing, but with the avo added in, it suddenly sounds great. Definitely going to try it.
