Cinco de Mayo

For Cinco de Mayo we had shrimp tacos (basically fish tacos but with shrimp since I don't love battered white fish) It was really good. It's basically popcorn shrimp, cabbage, & a white sauce (I also had guacamole, plain avocado, & pico de gallo too) all on corn tortillas. Yummy, yummy! We also had margaritas, some Orangeaid (in a really pretty bottle) & Mexican Coca-Colas (in glass bottles & made form real sugar cane). All in all it was a fun night!

P.S. here's the recipe for the white sauce (it's spicy when you eat it plain but on the tacos it's OH, SO GOOD!

FISH TACO WHITE SAUCE
1/2 cup plain yogurt
1/2 cup mayonnaise
1 lime, juiced
1 serrano pepper, minced
1 teaspoon minced capers
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon dried dill weed
1 teaspoon ground cayenne pepper

That sounds yummy.. I was going to make a fun Cinco de Mayo dinner, but Jared and I were out most of the afternoon and I didn't feel like cooking, so we had leftovers. Tonight I made enchiladas to make up for it!
