Healthy Recipe: Cilantro Lime Shrimp Burritos

Since we've been trying to eat on the healthy side we've been eating a lot of shrimp and fish- at least once usually twice a week.

I was going to make build-your-own-burritos with chicken but saw this recipe & thought that might be good.


1/4 cup lime juice (I used more like 1/2 cup)
3 large cloves of garlic
1/2 cup fresh cilantro leaves (chopped)
3 TBS canola oil
pepper (I just ground a lot into it)
1 pound large shrimp unshelled, no tails.
(put in a ziploc bag and marinate in fridge for 45 min)

For the fixings we used:

wheat tortillas
lots of fresh spinach
Es' yummy garlicy pico salsa (i'll harass her to put it on her blog)
sliced avocado
low-fat Mozzarella cheese
lime slices to squeeze onto the whole thing

Everyone LOVED it. LOVED IT. The kids mostly ate the fixings sans tortilla but it was relatively healthy & yummy!

That looks delicious! We will definitely be trying that. Also, Ben has that shirt Scott has on...I sure do love Target.

Oh man, shrimp tacos are a favorite around here! My kids especially go crazy for them.
