Healthy Recipe: Tomato Basil Soup

So, We've been eating really healthy for the past 2 weeks & I've found a couple amazing recipes. I've never eaten such good food, and never have I eaten such GOOD food.

Tonight I made homemade TOMATO BASIL SOUP


1) Preheat oven to 275 degrees. Mix 3 lbs of plum tomatoes (I used Roma b/c it what I had), 1/2 tsp pepper and 2 tsp salt; spray with canola oil cooking spray, then spread on baking sheet and bake for 45 minutes.

2) Saute 2 cups chopped onions and 3 cloves minced garlic with 1 tbsp. canola oil and 1/4 tsp red pepper (I use just a pinch more so it has a little spice to it) in large pot on medium-low heat for 15 minutes or until onions brown.

3) Add 1 can 28 oz canned tomatoes, 2 quarts vegetable stock, 1 cup fresh basil and 1/2 tsp fresh thyme to the same pot, then pour in baked tomatoes with liquid from baking sheet. Bring to a boil and simmer uncovered for 40 minutes.

4) Blend in a blender or food processor (I use a submergeable hand blender) until only slightly chunky. You can have it hot or cold.

Yum! I love tomato basil soup. This is a nice variation on other recipes I've seen that use a lot of butter and cream (which obviously add a lot of calories). Sounds delish!

yummy! I am going to have to try this one. I also tried your bbq chicken pizza which is also healthy and it was soo yummy. (instead of a boboli crust I used a mix to have a thinner crust). I also only used a little bit of cheese. It was soo fantastic!

This looks fantastic! I recently made a "healthy" tomato soup that was terrible. This one looks much better!
