I hope you guys aren't sick of my healthy recipes yet. I'll be honest- it kind of hard to find tasty non-bland recipes & it's annoying to try them & have them not taste very good. I've tried a couple that I haven't loved. So, I figure I should share what I've learned so far.
Turkey Chili is already a fav. I would eat this when I'm not eating healthy. It's so good- turkey instead of ground beef and a TON of veggies. TONS.
1. Assemble ingredients
1 small red onion
3 medium carrots
2 small squash (I used HUGE ones & they were good)
2 small zucchini (big ones here too)
1 tsp cilantro (I used A LOT more than that- I'm a fan)
1 TB chili powder
1 tsp cumin
1/2 tsp cayenne
1 1/2 lbs 99% fat free ground turkey
2 can fire roasted tomatoes
3 cups salsa (I use the fresh-made stuff from Macey's)
Avocados to top it
2. Saute onions with oil. Add carrots, squash, & zucchini until soft. Mix spices in a bowl & pour half in with veggies.
3. Brown turkey and add other 1/2 of spices.
4. Add veggies and meat into large pot. Add canned tomatoes and juice (if I had more time I would have liked to make my own fire roasted tomatoes for it). Add salsa.
5. Cook on high for 15 min, then low for 40 min while you play outside with the kiddos
6. Slice avocado & put it on top & serve.
P.S. I double this recipe when I made it becuase it freezes really well. I freeze lots in little "lunch" size baggies- it's a lot easier to just snag lunch in the freezer rather than find something healthy to eat.

When I saw your title, I was like, "Oh, I make turkey chili all the time" but then I saw the recipe, and it is nothing like the turkey chili I have made so I really want to try it. Thanks!
Sounds really yummy and so healthy too!! Completely guilt-free! The key to healthy eating that still is tasty is the spice combos. Of course anything with lots of butter and/or cream will be good, but they aren't necessary for great flavor (as you know).
Great idea to freeze it in little baggies. I'm going to have to try that.

That looks SO good! I LOVE chili! Whenever we have Chili we HAVE to have cornbread (which is not so healthy) but Jack is very disappointed if we don't.
