Healthy Recipe: Tomato & Basil Tilapia


1. Gather ingredients

Mild Tilapia (I love this frozen pack from CostCo)
tomato
fresh basil
an onion (I think it would have been good w/ a red one too)
garlic
a sprinkle of olive oil (I like to use veggie stock instead)
balsamic vinegar (not in the recipe but I thought it sounded good & it turned out great)

(NOTE: the recipe called for green olives- I don't like then & didn't have an black to substitute. After eating it I liked the recipe just the way it is)


2. Chop your onions (the recipe says slice but I like the onions smaller for the kiddos) and put in a pan with a little olive oil (again I use veggie stock & a TINY bit of oil, instead of just oil to lubricate the pan) until cooked.

3. Chop tomatoes into large slices (this makes it look pretty but if I were to do it again I would do chunks to make it easier for the kids to eat) & chop fresh basil.

4. Lay down onions in a pan & put fish on top

5. Sprinkle with fresh garlic (I use lots) & fresh basil (also use lots)

6. lay tomatoes onto & some fresh ground salt & pepper

7. Put in the oven at 375 degrees for 15 min (I did 20- just until it flakes). I also sprinkled some balsamic vinegar on it just b/c I love it.

8. The recipe didn't call for it but I laid it over a bed of spinach. It really added something to the dish & it was an added some more veggies.

MY FEELINGS ON FOODS PEOPLE DON'T LIKE:

PREFACE:

Okay, so I VERY strong opinions about trying foods, even if you "don't like them". I think as you get older & as you try different foods your pallet changes. I figure it's always a good idea to try foods you think you don't like again, just to see.

I do this with olives & pickles all the time. Just to make sure I still don't like them. I still don't.

THE POINT:
So, my point a lot of people don't like fish & that's totally okay. I've just heard people say they don't like fish expect salmon, but really salmon is often times a really "fishy" fish (if that makes sense). The mild Tilapia is SUPER non-fishy. Especially with this healthy tasty recipe.

CONCLUSION:
This is a great recipe for non-fish eaters to try. It's really healthy, easy, & yum to the yum.

I'll try this recipe soon! I agree with trying things again and again. I totally love lots of things I used to hate, like Peanut Butter, fish, blue cheese. There's really not much I don't like anymore.

If you make it for me, I will try it. Just kidding. But I would hate for Emily to make it and me not like it. Anyway, I would try it if it was available to try.

I can't believe you don't like olives and pickles. Two of the most awesome things ever!!!! I'll eat a whole pickle off the end of a fork. I love it.

Oh and FYI, we haven't found anything that Mirian won't eat. She is a good little eater.

Yay! This looks great. I have been so deprived of good food lately! I have been having gallbladder problems and until they are solved my doctor has me on a low-fat diet. I am a major foodaholic and have been suffering! This looks great! Thanks for the recipe! :)

agree - Tilapia is a mild fish. I also LOVE LOVE orange roughy. There are a ton of good fisheees out there, no need to get stuck on salmon.

I totally have a thing about adult picky eaters. I understand if you really don't like a food, but are you saying that about something that you haven't tried since you were 7? Yeah, it's a pet peeve of mine. Just had to agree with you there.

With that being said, I bought tilapia once years ago, and I made it and Chad and I both hated it. And I like fish. It tasted like dirty, bottom-feeder fish. Since then I have seen tilapia used over and over again on The Food Network and in recipes as a really mild fish. I think I just got some bad tilapia and need to try it again.

ya, I keep trying sushi... still don't like it. But I am trying out lots of new stuff here! and I eat tons of veggies (still don't think I'll love them in America, they cook so much better here)

but I agree with you about trying out different kinds of food. I'm a picky eater, but I'll always try anything at least once.

I try peas everyone once in a while to see if I can tolerate them now, but no, they still make me gag.

Katie - some tilapia is dirty tasting. I don't know if buying a better brand makes it taste better or what. We have had good results with the frozen tilapia from Aldi

Tilapia is my favorite fish, and because it doesn't taste too "fishy" it is more versatile I think. Grilled is my favorite, but I love tomato and this sounds good too.

I am a huge fan of the "try it again" mantra. I "hated" tomatoes for years, now I can't eat a sandwich without them. Also, said disliked food may have been prepared in a way you don't like, there are so many different things you can try for a certain food that completely writing it off is doing yourself an injustice. I'll be trying this soon. Thanks so much.

Definitely agree on trying things again and again. I remember my mom making Bobby and Levi try tomatoes once a year. James is a picky eater (and comes from a family of picky eaters, go figure!) But he's getting better after 5 years od marriage. Give me another 5 and maybe he'll eat fish (ok, maybe popcorn shrimp or something!)
