RECIPE: Beefsteak Tomato Salad

Thanks to Linds this is one of the best salad recipes I've ever had. I love all the ingredients, the ease, & the fact that it's a non-traditional. Yum!

Cut 3 ripe beefsteak tomatoes & thinly slice 1 shallot.

3 TBS olive oil & 3 TBS red-wine vinegar. Salt & ground pepper (the recipe also calls for capers but didn't have any)

Mix it all up & serve! (we had it with this Carter Fam favorite pizza recipe)

My sister makes a similar tasty salad but adds cucumber.

Love fresh tomatoes. One of the joys of summer.

We eat this all the time. My MIL makes it and calls it German Tomato Salad (her mother was from Germany).
We usually use Romas and do round slices, let it sit for at least a few hours, and serve it over boiled plain spaghetti noodles. Makes a great meatless meal and is especially nice in warm weather. We are probably going to have it tomorrow, in fact!

If you gotta have the meat, there is a version of my grandmother's German tomato salad that had ringwurst in it (basically sliced bologna).

I'm not gonna lie, as cool as that is, I'd never eat it. I just can't do it and you can't make me :). Haha.
