RECIPE: Penna Rosa


PENNA ROSA from Noodles&Co. is my favorite. I finally searched to see if there was a homemade equivalent. I made this the other night & I'd say its darn close. Nothing really equals someone else cooking for you, but its tasty-tasty!

INGREDIENTS:
1/2 lb penna pasta
1 TB white cooking wine
1 TB olive oil
1/2 tsp ground red pepper
1/4 cup heavy cream
1/2 cup marinara sauce
1/4 cup sliced mushrooms
1/4 cup spinach
1/2 14 oz can Italian tomatoes

DIRECTIONS:
Boil pasta.
In skillet heat wine, oil, marinara, mushrooms, tomatoes, & red pepper.
Stir for 4-5 minutes.
Add & mix pasta & cream.
Fold in spinach until wilted.

NOTES:
1) I found that this recipe was a tad on the dry side for me. I ended up just adding a bit more marinara & cream until it was the right consistency.
2) Also, the red pepper gives it a "kick" you may want to put in less or more depending on what you like, but the spice really is what makes it good!
3) I inherited a pallet of canned mushrooms when my mom passed away so I used them & they worked awesome too.
4) I used fresh tomatoes and added a bit of fresh garlic instead of canned tomatoes.

I just bought white cooking wine just to use after we ate this the other day! Yummmmy!
