Happy PIE-oneer Day!

Yesterday was our lovely state holiday of Pioneer Day. We had a full day of errands & other goodness but in the evening I really wanted to do something with some friends & their kiddos to celebrate. So, I decided to have a PIE-oneer day dinner!


I totally designed this to put up at the party, but forgot it so here, you guys can enjoy it. Get it, get it. Pie + a handcart = Pie-oneer!

We scrapped together food between all of us & then we each brought different pies. That way we made up a little pie bar & we could try each one. Oh, you guys, everyday should be PIE-oneer day!

Just look at this lovely spread:

I made a strawberry chocolate cream pie & I have to say it was delicious! Not only does it look really pretty but it was tasty & most importantly EASY!

INGREDIENTS:

1 quart fresh strawberries
1 8-oz. package cream cheese at room temperature
1/2 tsp. vanilla extract
1/4 cup packed light brown sugar
1 cup heavy whipping cream
1/4 cup powdered sugar
1 9″ graham cracker crust
3 - 4 oz of a chocolate bar

DIRECTIONS:

Beat the softened cream cheese, brown sugar, & vanilla until light and fluffy.
In a separate large bowl, beat the whipping cream & powdered sugar until medium peaks form. Add about 1 cup of the whipping cream mixture to the cream cheese mixture & beat.
Add the remaining whipping cream mixture & stir until just combined.
Spread in the graham cracker crust & put in fridge while you prepare the strawberries.

Wash & take off the green part and split them in half (I actually like if I made this again I'd slice them a lot thinner and spread them over the top so it would be easier to cut into & eat).
Spread them over the top of the cream in the crust.

Break the chocolate bar into equal pieces & put it in a small Ziploc bag.
Microwave for 1-1 1/2 minutes, stopping the microwave every 20 seconds to mash the bag.
You want the chocolate to be melted but not hot at all.
When the chocolate is melted, snip a corner off the bag &drizzle it over the strawberries. Refrigerate for at least three hours before serving.


And, yes, I ate a piece of each one.
And, yes, I got sick.
And, yes, it was totally worth it.
