I can not for the life of me find the origional recipe I used but I'm pretty sure this was it. The things I added are in italics...
1 can diced tomatoes (I used one with garlic added b/c I love garlic. I also used some fresh tomatoes that I seeded)
1 small can tomato paste
1 jalapeno
1/2 onion
1/2 bunch cilantro (I used more like 3/4 a bunch)
1/2 yellow pepper (just because I like a tad bit of sweetness)
1 decent squirt of lime juice (I used juice from one lime & a long squirt from the bottle)
Blend in food processor or blender. (I used a blender b/c I like it really finely chopped)
I couldn't find a recipe for homemade fried tortilla chips so I kind of made it up. There are lots for baked if you want to try those.
I put canola oil in a large flat but tall pan & put it on high. When it was hot I cut up corn tortillas into triangles & threw them in, flipping them until they were brown. When I pulled them out I salted them & threw on just a touch of lime juice too.
Come on by the Carter Casa & try some! It's actually quite yummy!

It sounds good. Do you use a bushel or bunch of celantro. There is a big difference.

What the H you made your own chips???? Holy cow! I am seriously so impressed. And want to try them if they're not all gone. And yes I want that pepper jelly can't believe I missed that today. And so sorry I bailed on babysitting today - did you reschedule or find someone?? Let me know!
We're going to make this salsa recipe tonight. Lots and lots of ripe tomatoes in our garden, so we'll use the fresh stuff!
